Once you get your pizza crust rolled out, throw it in the oven for a few minutes to partially cook it. Then take it back out and add the toppings and finish cooking. I think you'll enjoy how much easier it makes the process.

When making the pizza, always flour the counter top before you lay the dough down. Also when making the dough always save a little flour (even just 30-50g) and roll the dough in it before you roll it out. Then use a SOLID paddle (not one with holes in) as the dough is so fragile that if even a millimetre of the dough catches on the edge of ONE of the holes it ruins the pizza (especially when making thin crust). OOH! and one other thing we used to do! (I was a chef for 7&1/2 years) .. add 50g olive oil (depending on batch size. In the restaurant we did 50g Olive Oil, 1ltr water, 1.5kg flour, 20g salt and 15g yeast) to the dough mixture when you're folding it all in and then brush it on with a pastry brush you cover it and let it activate xx
